    Ingredients

    This recipe is built around a fresh lemon marinade and quick direct-heat cooking, giving you chicken that’s nicely browned on the outside and tender on the inside.

    • 4 chicken breasts
    • 2 yellow lemons
    • 3 tablespoons olive oil
    • 2 garlic cloves
    • 1 teaspoon paprika
    • 1 teaspoon herbes de Provence
    • Salt
    • Freshly ground black pepper

    • Metal or wooden skewers
    • Kamado with direct cooking

    Preparation

    Step 1: Prepare the chicken

    Cut the chicken breasts into even pieces of about 3 to 4 cm. This ensures even cooking and helps prevent some pieces from drying out during cooking.

    Step 2: Prepare the lemon marinade

    In a mixing bowl, combine:

    • juice of both lemons
    • olive oil
    • finely chopped garlic
    • paprika
    • Herbes de Provence
    • salt and pepper

    Add the chicken pieces and mix well so each piece is perfectly coated.

    Leave to marinate for 30 minutes to 2 hours in the fridge.

    Step 3: Assemble the skewers

    Thread the marinated chicken pieces onto the skewers, leaving a small gap between each piece to encourage even cooking.

    Step 4: Prepare the kamado

    Light your kamado and stabilise the temperature at around 200 to 220°C for direct cooking.

    Set the cooking grate in place and let it heat up well before putting the skewers on.

    Step 5: Cooking the skewers

    Place the skewers on the hot grate.

    Cook for around 10 to 12 minutes, turning regularly to get an even golden colour on all sides.

    The chicken should stay juicy inside while being nicely grilled on the outside.
